Let me start by saying that starchy carbs and grains mostly consist of things like bread, cereal, pasta, white potatoes, rice and many others.As a paleo lifestyler these things are a no no. My carb intake comes mostly from fruits and root vegetables.
1. Cauliflower instead of rice
I know most people have heard of this one already. But, it really is tasty. My favorite way to eat it is like fried rice. I add tons of veggies, a meat of some kind, ginger, garlic and coconut aminos(tastes exactly like soy sauce). Sautee in a pan with coconut oil and thats it.
2. Portabella mushrooms instead of a bun/roll
I usually eat this like a burger or I stuff it and roast in the oven.
3. Spaghetti squash or zucchini instead of pasta
This one is one of my favorites. Sometimes I use these instead of the cauliflower to make the stir fry. I also make it italian style by using ground meat and tomato sauce.
4. Root vegetables instead of french fries of potato chips
The root vegetables I am referring to are sweet potato, parsnips, carrots, routabega, turnips, beets and many others. I don’t eat white potatoes though. They have a higher starch content and these other root veggies have alot more nutrional value. I usually slice these veggies up and roast in the oven until crispy.
5. Sweet potato instead of toast
This is awesome! I slice it a little less thicker than a bread slice and pop it in the toaster. It usually takes about three rounds of toasting on a lower setting. It depends on how soft you want the potato. I like to top with mashed avocado and egg. For a sweeter version, almond butter with cinnamon and blueberries.
6. Cucumber instead of crackers
I actually use cucumbers along with bell peppers and celery. My favorite way to use this one is for tuna salad. I usually use white albacore tuna in water and add some mashed avocado and chopped onion.
7. Lettuce instead of tortillas
Basically just use a leafy lettuce in place of the tortilla. This is also a good one for sandwiches.
So these are some of my favorite ways to replace starchy carbs and grains. Since I’ve used these replacements, my vegetable intake is a lot higher!
